Connie Roberts can still remember her first trip to Disney World even though she was 7 years old. The joy she felt would stay with her for years until she could visit again as a teen. That's when she hatched her plan to move to Florida. Although it took many years for this plan to come to fruition, Connie surrounded herself with all things Disney. And with every move, the closer she came to the parks, the more Disney she gathered. Finally in her late 20's Connie was close enough to Disney World to visit and drive back home in a day. Being a Disney FANatic has been passed on to her 2 daughter and her husband and she's found sharing this love on her blog Brain Foggles and on Twitter, where she's known as the go to person for Disney World questions.


Food at Disney World is a clue to our Featured Blogger of the Month of August. And if that’s not exciting enough for you, how about learning how to cook that food at home? Kristen Hoetzel is the DDL Dining Tips Blogger and our featured blogger. So get ready to learn more about her!

In case you didn’t already know, Kristen loves to cook.  She makes use of her Disney cookbooks and some of her Epcot International Food & Wine Festival cookbooks. She doesn’t only share her cooking talent at home, but she creates videos to teach others Disney recipes on DDL and on her own blog CookingwithMickey.info.  Kristen provides Disney recipes,  restaurant reviews, dining information and Disney news.

Kristen’s passion for Disney and it’s food created a new Disney fan – her husband, who now writes a blog about Disney, Star Wars and Marvel. Kristen HoetzelHe’s also Kristen’s companion as they visit Disney World four – seven times per year. Her friends are very fortunate as they get to enjoy Kristen’s Disney meals that she creates.

Her first trip to Disney World was pretty impressive. While in high school in Ohio, she traveled to march in the Orange Bowl Parade and was able to spend three days at Disney on the way to the parade. She had been to amusement parks before, but there was nothing like being in Walt Disney World! This was the start of her love affair with Disney.

Of course, no post about Kristen would be complete without naming a few of her favorite Disney restaurants. Her all time favorite is Victoria & Albert’s because of the “extraordinary food in a beautiful dining room with top-notch service.”  She also chose Via Napoli and explained that it made her feel like she was back in Italy again. La Hacienda de San Angel’s  food reminds Kristen of a “beach front restaurant in Puerta Vallerta.” Flying Fish is on her list because of the best seafood menu and cheese plate and Raglan Road because everything on the menu is good and the entertainment and atmosphere are top notch.

Kristen is an avid photographer who keeps her photos as keepsakes of her trips to Disney. She puts them in scrapbooks and frames some. She also enjoys taking videos. If she could work at Disney, besides being a chef, she’d like to be a PhotoPass Photographer. She maintains her knowledge about Disney and keeps up with news by reading a number of blogs, visiting the Disney company websites and by having Google alerts set up for various Disney keywords.

As a Nashville Predators Hockey season ticket holder, who goes to every game, Kirsten is an ultimate fan. But, if there’s a Disney trip planned, she’ll chose Disney over the Predators any day. She and her husband were chosen to be Grand Marshals in the Celebrate a Dream Come True parade one time and it’s a memory of her lifetime.

Kirsten’s goal is to show others that making a Disney meal can be easy and that’s where the use of videos came in. She also wants people to try new food so she shares what she’s eaten, with photos, descriptions and often a recipe, and provides information on the Disney Dining plans and discounts. It’s easy to get caught up in her passion and to learn something new when you read one of her posts or watch one of her videos.
